Julien Raphanel

Julien Raphanel was not destined for the kitchen. And yet, one day, his passion was revealed behind the scenes, in the hustle and bustle of a brigade, somewhere between the demands of a profession and the transmission of a father. First apprenticed, then working as a chef in some of the world’s finest establishments, he forged his expertise in contact with inspiring chefs, until joining the prestigious Les Crayères brigade alongside Philippe Mille in 2014. Seven and a half years later, he became sous-chef, and in 2021 took over the reins of the kitchens at La Caserne Chanzy and its restaurant La Grande Georgette. It’s in this Art Deco building, facing Reims Cathedral, that he imagines a neo-classical cuisine in his own image: rigorous, local, lively. A short menu, seasonal produce, a quest for balance and precision, always with respect for taste.

My wife and I had a wonderful evening.
The food was delicious - the best I have ever had.
The champagne was also wonderful and very interesting. We learned so much about the individual champagnes and how to differentiate between different styles.
The format was very good - getting to meet people from the USA and local to Reims.
We would definitely recommend this event to others.

This was an amazing experience. We are from Seattle, WA USA and received the event notification from our hotel (La Caserne Chanzy) and jumped at the opportunity. Well worth it! As non (well a little) French speakers, we were a little nervous, but were welcomed and had a wonderful time. The food was wonderful and the wine pairings were spot on. We had never had ratafia and are grateful for experiencing something new that we love.
